Sugar Free Chocolate Mousse: A 5-Ingredient Keto Dessert Ready in Minutes

· 5 min · Watch on YouTube

In short

A dessert that’s ready in a jiffy. Soften 3oz of cream cheese in the microwave, mix in half a cup of cream, a quarter cup of sweetener, 2 tablespoons of cocoa and a teaspoon of vanilla, then whip it with an electric mixer until it stands up on the spoon.

Key points

  • Five ingredients: 3oz (about 85g) cream cheese, ½ cup cream, ¼ cup sweetener, 2 tablespoons cocoa (I used cacao this time) and about a teaspoon of vanilla essence.
  • Soften the cream cheese first. 10 or 15 seconds in the microwave makes it a bit more fluid and easier to mix.
  • Pick your sweetener. I use Lakanto monk fruit sweetener, but Swerve or whatever sugar alternative you prefer will do.
  • Make it to your taste. Like it less chocolatey? Dial down the cocoa. Like it sweeter? Add more sweetener.
  • Don’t expect peaks. Because of the cream cheese, it won’t peak the way plain whipped cream does.
  • Hand-mix the cocoa first. A quick stir by hand stops the cocoa powder flying everywhere when you hit it with the electric mixer.
  • Not too sweet, not too rich. The finished mousse stands up on the spoon and isn’t overly chocolatey or overly sweet, which is how I like it.

Think dessert’s off the menu on low carb? Think again. In this video I make a rich, creamy chocolate mousse with no sugar, five ingredients and no cooking, and it’s done in a few minutes.

It’s a super quick dessert that I’d wager anybody can make. The cream cheese gives it body, so it holds up on the spoon, and you can tweak the cocoa and sweetener until it’s just the way you like it.

Method in brief

  1. Pop 3oz of cream cheese in the microwave for 10 to 15 seconds to soften it.
  2. Put the cream cheese in a bowl and add half a cup of cream. Give it a little mix.
  3. Add a quarter cup of your low carb sweetener and 2 tablespoons of cocoa powder.
  4. Stir it by hand first so the cocoa doesn’t fly everywhere.
  5. Add about a teaspoon of vanilla essence.
  6. Whip it all with an electric mixer until it’s smooth and thick enough to stand up on the spoon.
  7. Taste it, and add more cocoa or sweetener if you want it richer or sweeter.

Why I make it

When a sweet craving hits, this is about as quick as it gets. There’s no refined sugar in it, so it fits right in with keto, LCHF and keeping your blood sugar in check.
