Chocolate Mug Cake: A Low Carb Treat Ready in 60 Seconds
In short
A chocolate fix in about a minute. Mix a tablespoon of coconut flour, a tablespoon of cocoa, half a teaspoon of baking powder and 2 tablespoons of sweetener in a mug, stir in a tablespoon of melted butter and an egg, add vanilla and a few sugar-free chocolate chips if you like, then microwave it for 60 seconds.
Key points
- Six main ingredients: an egg, ½ teaspoon baking powder, 1 tablespoon coconut flour, 2 tablespoons sweetener, 1 tablespoon cocoa and 1 tablespoon butter.
- Optional extras: a dollop of vanilla essence and a few keto or sugar-free chocolate chips.
- My sweetener: I use Lakanto monk fruit sweetener.
- Melt the butter first. You don’t have to, but melted butter makes it much easier to stir through.
- Dry ingredients first. Give the coconut flour, cocoa, baking powder and sweetener a quick mix in the mug before the butter and egg go in.
- 60 seconds in the microwave. It comes out a lot like a chocolate sponge pudding.
- How I serve it: tipped into a bowl with some fresh cream or keto ice cream.
Not a mud cake, a mug cake. In this video I make a chocolatey, keto-friendly cake right in a mug, and it cooks in the microwave in 60 seconds.
It’s one of those treats that helps you cut back on the carbs but still maintain the will to live. A handful of pantry ingredients, one mug, one minute, and you’ve got something that eats like a chocolate sponge pudding.
