Low Carb Spicy Meatballs: Bold Flavour, Lunch-Box Ready

· 14 min · Watch on YouTube

In short

Spicy meatballs without the flour. Mix 500g of ground beef with a finely chopped onion, 2 teaspoons of chopped garlic, curry powder, cumin, garam masala, hot paprika, salt and pepper, then bind with 2 eggs and 50g of almond flour. Roll them small for the lunch box, coat the tray with olive oil, and cook in the air fryer at about 180°C for 15 minutes — or brown in a pan and finish in the oven. Cold on the road or hot at home, they’re pretty much an entire meal.

Key points

  • Farm beef, big spices. 500g of ground beef from our own cattle, plus curry powder, cumin, garam masala, hot paprika, garlic, salt and pepper. The clue’s in the name — spicy meatballs.
  • Almond flour instead of flour. Traditional meatballs use plain flour. We don’t. 50g of almond flour binds them without the carbs. Crushed pork scratchings are another option.
  • Mix by hand. Onion, garlic and spices go in with the beef first, then eggs and almond flour. A good hand mix gets everything combined.
  • Size is up to you. Bigger balls take longer to cook through. I keep them fairly small so they fit the lunch-box tray and cook evenly.
  • Air fryer is the easy path. Olive oil on the tray so they don’t stick, leave gaps for air to circulate, about 15 minutes at 180°C / 350°F.
  • Or pan then oven. Brown them in a little olive oil, then finish in the oven at about 180°C for 15–20 minutes.
  • Turn up the heat if you want. Chilli powder, onion powder or garlic powder are fair game if you want more punch.
  • Lunch-box friendly. I eat them cold on the road the next day. Healthy options out there are thin, so packing these beats chucking the bun off a burger.

Need a proper meal you can take on the road without falling back on the drive-through? In this video I knock up a batch of low carb spicy meatballs — ground beef, almond flour and a solid hit of curry, cumin, garam masala and hot paprika. Air fryer or pan-and-oven, they cook in about 15 minutes and they’re just as good cold in a lunch box.

Method in brief

You’ll need: 500g (about 1.1 lb) ground beef, 1 medium onion finely chopped, 2 teaspoons chopped garlic, 2 eggs, 50g (½ cup) almond flour, curry powder, cumin seeds or ground cumin, garam masala, hot paprika, salt, black pepper, and a little olive oil for cooking. Optional extras: chilli powder, onion powder or garlic powder.

  1. Finely chop the onion and tip the beef into a bowl with the onion, garlic and spices. Mix well by hand.
  2. Make a well, add the 2 eggs and the 50g of almond flour, then mix again until it all comes together.
  3. Roll into meatballs — smaller if you want them for a lunch box and a quicker cook.
  4. Air fryer: coat the tray with olive oil, space the meatballs out, and cook at about 180°C / 350°F for 15 minutes, until cooked through.
  5. Pan + oven: brown in a little olive oil, then finish in the oven at about 180°C / 350°F for 15–20 minutes.

Why it works

You’re keeping the juiciness of proper meatballs and swapping the wheat flour for almond flour, so the carbs stay low while the spices do the heavy lifting. Pack a tray for tomorrow’s lunch and you’re sorted when the only roadside option is a sad sandwich.
