90 Second Keto Bread: Microwave Low Carb Bread With Almond Flour

· 5 min · Watch on YouTube

In short

Bread without the wait. Melt a tablespoon of butter, whisk in an egg, a pinch of salt, half a cup of almond flour and half a teaspoon of baking powder, microwave for 90 seconds, then cool, slice and toast.

Key points

  • Ingredients: 1 tablespoon butter, 1 egg, a pinch of salt, ½ cup almond flour and ½ teaspoon baking powder.
  • Melt the butter first in a microwave-safe bowl for about 20 seconds, then whisk in the egg.
  • Mix in the dry bits — salt, almond flour and baking powder — until combined.
  • Shape matters. Pour into a roll-shaped microwave-safe bowl, flatten the top, and microwave for 90 seconds.
  • Cool, slice and toast. It looks properly bready once cut in half, and it toasts like toast.
  • Use it for a bacon and egg sandwich, cream cheese, or whatever you’d normally put on bread. Almost no carb, and it gets you out of a bind when you’re hankering after a sandwich.

One of the most missed things on low carb is a good old lump of bread. In this video I knock up a soft, buttery 90-second keto bread in the microwave — five ingredients, no proving, no oven.

It’s the quick fix when you want a sandwich without blowing your carbs. Almost no carb, and it toasts like the real thing.

Method in brief

  1. Put a tablespoon of butter in a microwave-safe bowl and melt it for about 20 seconds.
  2. Add one egg and whisk it up.
  3. Add a pinch of salt, half a cup of almond flour and half a teaspoon of baking powder. Mix well.
  4. Tip the mix into a roll-shaped microwave-safe bowl and flatten the top.
  5. Microwave for 90 seconds.
  6. Let it cool a bit, slice in half, then toast until browned.

How I eat it

The world’s your oyster from there. I often turn it into a bacon and egg sandwich for lunch. Toasted with cream cheese is another easy option — or anything else you’d put on proper bread.
