🧀 Philly Cheesesteak Casserole (Low Carb Comfort Food)
If you’re missing your old favorites on a low-carb or diabetic-friendly diet, this Philly Cheesesteak Casserole is going to hit the spot.
It’s rich, satisfying, packed with flavor, and best of all — completely guilt-free.
👨‍🍳 Why This Recipe Works
This dish takes everything we love about a classic Philly cheesesteak — the beef, the peppers, the mushrooms, the onions, the gooey cheese — and ditches the bread for something even better.
It’s the perfect meal if you’re:
- Managing type 2 diabetes
- Over 50 and focused on weight loss
- Living a low carb / keto / LCHF lifestyle
- Just tired of boring “healthy food”
đź›’ Ingredients
Here’s what you’ll need:
- 1 Kg (2 lbs) Ground beef – high in protein and satisfaction
- 1 – 2 Capsicums (bell peppers) – adds crunch and color
- 1 Cup Mushrooms – earthy and filling
- 1 Cup Onion Chopped – for that classic cheesesteak flavor
- 110g Cream cheese – adds richness and brings it all together
- 1/4 Cup Beef Stock (or Bone Broth)
- 1/2 Teaspoon Garlic or Onion Powder
- 1/2 Teaspoon Black Pepper
- 1 Teaspoon Smoked Paprika
- 1/2 Teaspoon Italian or mixed herbs
- 1/2 Teaspoon Salt
- Optional: Grated cheese on top for that bubbly, golden finish
🔥 How to Make It
- Brown the beef in a pan, season with salt and pepper.
- Add sliced onions, capsicum, herbs and spices and mushrooms. Sauté until soft.
- Stir in the cream cheese until melted and creamy.
- Add the beef stock
- Transfer to an ovenproof dish.
- Optional: Sprinkle grated cheese on top.
- Bake at 180°C (350°F) for 15–20 minutes until golden and bubbly.
🍽️ Why It’s Great for Low Carb Living
This casserole ticks all the boxes:
- High in protein
- Very low in carbs
- Satisfies cravings without blood sugar spikes
- Great for meal prep or leftovers
- Comfort food without the crash
If you’re trying to reverse type 2 diabetes, lose weight, or simply eat cleaner without giving up flavour, this one’s a winner.
