Keto Crème Brûlée – A Low Carb Classic Dessert

If there’s one dessert I always reach for on the menu, it’s crème brûlée. That crispy, caramelized top over smooth, velvety custard – it’s a crowd favorite for a reason.

In today’s recipe, I’m going to show you how to make a low carb, keto-friendly version of this iconic treat using monk fruit sweetener instead of sugar. It’s creamy, rich, and 100% guilt-free.

What You’ll Need

  • 4 egg yolks + 1 whole egg
  • ½ cup monk fruit sweetener (or Swerve, Lankato – your preferred alternative)
  • 3 cups heavy cream
  • 2 tsp vanilla extract (Don’t forget this like I did!)
  • Extra monk fruit sweetener (for caramelizing on top)
  • Ramekins (small ceramic dishes)
  • Baking dish (for a water bath)
  • Kitchen torch (or a flamethrower if you’re feeling bold )

Step-by-Step Instructions

1. Warm the Cream

Pour the 3 cups of heavy cream into a saucepan and gently heat it until it starts to bubble around the edges. Don’t boil it — just a soft simmer is perfect.

2. Prep the Egg Mixture

In a large mixing bowl, combine:

  • 4 egg yolks
  • 1 whole egg
  • ½ cup monk fruit sweetener

Whisk until smooth.

Add in your 2 tsp of vanilla extract here. I forgot during filming — don’t be like me!

3. Temper the Cream

Slowly pour the warm cream into your egg mixture while whisking constantly. This step prevents the eggs from scrambling.

Once combined, transfer the custard back into a jug to make pouring easier.

4. Fill the Ramekins

Pour the mixture into your ramekins — around ¾ full each. Then place the ramekins into a baking dish.

5. Water Bath

Boil some water and carefully pour it into the baking dish until it reaches halfway up the sides of the ramekins. This water bath keeps the custard from cracking or drying out.

6. Bake

Preheat oven to 300°F (150°C).
Bake for 45–50 minutes until the custard has just a slight jiggle in the center.

Let cool at room temperature for 15–20 minutes, then chill in the fridge for at least 1 hour.

7. Brûlée Time

Sprinkle monk fruit sweetener on top of each custard. Use a kitchen torch to gently melt and caramelize the topping.

Let sit for a few minutes until the top hardens.

A spoon that cracks through a glassy top and dips into rich, creamy custard – you won’t believe this is low carb.
